For your interests, we use http://www.highcharts.com/ most of the time. It’s easy to use, easy to implement, does not requires html5 8)

Unfortunatrly, it seems that none of these are opensource. It is free for “non commercial use” only.
I sometimes use pchart for gpl software : http://www.pchart.net/ (both gpl3 and commercial licences availables). However it’s PHP producing images, not html5 :-[
However, after a while, I developped my own php libraries doing only what I need, lighter to use than all those “all-in-one-bundled” things…
