Now for the most important part. What am I replacing ? The FEZ Cobra is going to provide some rest for some one else.
When people tell me that they can use a PIC to do this or an AVR to do this or a generic ARM solution, I have to say listen " we have been there and done that" and are realizing the potential of the FEZ and NETMF platform.
You can probably write your own operating system but you would probably use Windows or Linux and then you concentrate on writing your final application.
This is the idea of FEZ, you do not care how files or USB is handled. You ask FEZ to make a file and it does it for you …then you can concentrate on making your final application instead of spending months trying to learn USB or file system…or the other 1000 features GHI have in FEZ already 
It was very difficult to convince users that FEZ is not another hobby toy (Arduino, BS2, picaxe…etc.) but thanks to the community we have now, this is becoming easier to explain.
