Choose small project for beginner

I’d like to make a little joke to put into practice my skills in electronics (not many).
I needed a help / advice to choose the best project to do, was thinking of using the FEZ Domino because I used a work placement.

Do you already have a FEZ Domino? I think GHI will only make new ones if you order a minimum 100 [source].
