I agree with Foekie, plug and play the video bit. Fez is a great idea for the control mechanism, but for the video, not so much (not at all).
There was a posting of someone doing this with a USB steering wheel control and video on a fast RC car, check around. Use some of their findings.
Certainly wifi and web based control will be possible but does that get you anything above a serial link over zigbee or equivalent network?
